Tom Whitaker, MasterChef finalist & Dhruv Baker, Masterchef Champion have collaborated to create Tempus Charcuterie - a Charcuterie company that sources the finest meats from single breed pigs and ex-dairy cattle. Dhruv has a palette for spicing that is second to none and Tom has trained with master charcuterie makers in Italy to learn the art and craft of curing meat. They are both obsessive about the quality and provenance of their ingredients and they took this passion to its purest form...charcuterie!
Tempus Charcuterie sources single breed pigs and ex-dairy cattle, hand selected by Tom and Dhruv. In partnership with the farmers, these animals are allowed to age significantly more than normal, which allows the true nature of their flavour to be realised. Tempus practises whole animal butchery and the various cuts are handled carefully and enhanced with salts and spices before fermenting and ageing in a purpose-built facility, with nothing going to waste.
